Intense and elegant, balanced with notes of white flowers and lemon zest.
Palate:
Fresh and tangy attack, gaining amplitude, with a good balance between roundness and tension.
Finish:
Long, with otes of almonds, mouth-watering.
Terroir
Saint Hippolyte du fort, contrefort des Cévennes.
Soil type:
Limestone hill
Grape varieties:
Grenache blanc, Roussanne & Rolle.
Vinification:
Traditional vinification with a long maceration (15 to 20 days) with pump over.
Maturing:
6 months in stainless steel tank
Yield:
45 à 50 hl/ha.
Alcohol:
13% Vol.

Within 2 years

KEEPING:

To drink within 2 years.

If you especially want to taste this wine’s fruitiness we advise drinking it within the first year.

However, you may prefer to wait so as to enjoy the wine’s secondary aromas, in which case we suggest drinking it at two years.

As with all wines, the temperature at which it’s kept will dictate how well it keeps.

TASTING:

Best served between 10°C and 12°C.

To enjoy it best, we advise you to drink this wine with a meal.
